Exhibiting warp speeds, crazy sharp teeth, and some of the most brilliant colors and camouflage of any game fish, the wahoo is one of south Florida’s prized catches. Yielding firm opaque meat that can be cut into steaks, loins, or thin slices for sashimi, wahoo is one of my favorite fish to target and eat. It is excellent grilled, seared, smoked, sautéed or raw. When the bite is on, our local Fl. Wahoo charters and two day Bahamas trips will have you hooked for life.
Wahoo average three to five feet and 25 to 60 pounds, but fish exceeding the 100 pound mark hit south Fl. docks every year. Targeting these fish in depths from 125 – 600 feet of water along, color changes, reefs, and ledges, using natural or artificial baits, trolled deep, at speeds from 6.5 to 15 kts. often produce double header strikes at break neck speeds from sushi grad torpedoes.
